Good to go back to the old haunt that is Sussex St food court. This new addition is crazy popular. A mixed crowd at the moment including (encouragingly) a number of Japanese people.Sold out of 2 types of Tokyo ramen 1hr 40mins into the day (wonder what Ryo's record is). So that gives you an idea of popularity.
The soup is genuinely good, miso had nice depth of flavour. Although not as tasty compared to the miso, the Shoyu possessed the clarity we constantly ramble about.
Cha shu was a bit tough but again good flavour.
The Bamboo shoot must be real bamboo shoot or come out of an awesome can because you very rarely get this level of quality bamboo shoot in Australia.
Noodles themselves nice and chewy too, similar to where we went in San Fran.
Ramen Ikkyu presents an interesting problem. Usually at popular "no booking" restaurants you wait for a table and once you are seated the food comes our relatively quickly. Ramen Ikkyu turns this paradigm upside down.
It is in a food court...so you order quickly. Then you wait (in our case 53 minutes) while they slowly churn out the food.They need a bit of a Mappen style system or (as ridiculous as this may sound) they need to make you wait longer to order thereby shortening the wait to get the food.
Sources close to the Chef say he's aiming for quality, presentation and taste at the expense of speed however we'd question why a bowl of noodles takes an hour when usually it's 90% pre-prepared. Chuck the soup in the bowl, cook the noodles dump the rest on top send it out the door.
It’s good but honestly one could eat faster at Quay.
Luckily it was tasty, that managed to keep them in the "we'd go back" range - we'd go back but if the line was too long we'd go to the old faithful Korean place opposite or maybe even Gamshara down the road (which we weren't blown away with).
