We're not sure what the hype is about. Good quality ingredients but they are mostly wasted and under utilised.
One of our friends who once had a blog said Hubert was "rich, classic, good quality, no surprises".
Rich? Maybe the owners are. Classic? What's classic about kimchi gratin or bonito jelly? Good quality? Yes, we'll give them that. He was right on "no surprises" but a surprise would have been nice.
We walked out thinking it was one of the most underwhelming dinners we've eaten for a while, it didn't even inspire a "it's so fresh" comment from the usual suspect.
Rabbit - decent but meh
Cold cuts - cold cut like
Jelly - bonito flavour doesn't agree with us
Deep fried cheese - way too much mustard
Vegetables - what the? The aioli was good though,nice use of horseradish
Green tart - good pastry, filling was enjoyable as we ate more
Beef tartare - really good beef but seems a bit wasted in this form. Tasted like a cheeseburger
Chicken - soft but not spectacular. Nice mushroom sauce
Fries - not crunchy enough
Potatoes - good
Religieuse- like a profiterole. Seemed a bit dry.
Creme caramel - very burnt caramel but overall tasty
Meh-lon - ok but unspectacular, better off buying a melon bingsu at a Korean cafe
